Why we recommend this wine
On our last visit to Champagne we visited Soutiran for the first time. What a find! We just loved their wines; it has become our grower champagne of choice.

The wine
Made from Grand Cru grapes (about two thids Pinot Noir and one third Chardonnay)
Primarily form 2013 vintage, the wine was bottled in May 2014 and, after aging on lees for several years, it was disgorged in 2018.

The wine estate
Soutiran is a third generation, family business that manages 6 hectares of vines, the majority of which are situated on the terroir of Ambonnay with a few parcels of 1er Cru vines in the surrounding area. This is augmented by the purchase of grapes grown close to their domain, partly under their management.
The vineyard management respects sustainable viticulture practices. Following soil analysis, plots lacking in nutrients are enriched, with organic fertilizers only. Working the soil reduces the need for herbicides. The vineyard is protected by sexual confusion practices to avoid using insecticides.

Food and wine
Champagne is better if it has been opened and allowed to breathe for 20 to 30 minutes before drinking. We didn’t believe it when we were first advised to do this but it really works. Just open the bottle and leave it in the fridge; it will not lose its bubbles but will taste much better.
A perfect match for delicately flavoured foods and soft cows milk cheeses such as Langres, a cheese that originated in the plateau of Langres in the Champagne region. Also see our guide to pairing food and wine here.

Did you know?
Although more than 320 villages constitute the AOC Champagne, only 17 of them qualify for the title “Grand Cru”. These exceptional terroirs barely represent 12% of the total surface area of production, which adds to their rarity.
