Why we recommend this wine
Outside Burgundy most wine makers use oak in their chardonnays but De Wetshof have been making this unwooded chardonnay for years and we have always rather fancied it.
The wine
Bon Vallon is an unwooded Chardonnay exuding fresh green apple, peach and citrus aromas with zingy, mineral flavours lingering on the palate. De Wetshof suggest that this wine will cellar for 6 to 10 years, or half of that for a half bottle.
The wine estate
De Wetshof is one of the few third generation wine estates in South Africa. It was the first registered wine estate in the Robertson region and has become known internationally as South Africa's eminent Chardonnay House. Since the early 1970’s meticulous records have been kept for each vineyard as to the plants’ reaction to soil-types, irrigation and the vagaries of climate, as well as their development and progress over the years. Each vineyard is vinified separately during the wine-making process, the wine-makers having a clear understanding of what the fruit of each vineyard is going to deliver that year.
