The wine
Made from Chardonnay grapes grown on vines that are more than 40 years old in Vertus and other Premier Cru vineyards on the Côte des Blancs. The fermented wine spends 7 months on lees, in vats and oak casks 75%/25%. The blending is from 3 consecutive Vintages with 20% of Reserve wines. After blending, it's aged on lees for a minimum of 30 months, contributing to its complexity. It is bottled unfiltered and they make minimum use of sulphur. Being an Extra Brut the dosage is only 5 grams per liter of grape sugar syrup. This champagne is suitable for vegetarians and also for vegans because the disgorgement process eliminates the need for animal-based fining agents.
The wine estate
Veuve Fourny & Fils, located in Vertus, has a history dating back to 1856. The estate is now run by brothers Charles and Emmanuel Fourny, the fifth generation to produce champagne wines. They now own and lease (from other family members) some 20 hectares of vines that are farmed with a focus on sustainable viticulture practices.
