Why we recommend this wine
Our ideal wine has plenty of fruit but also good balance and is made on a ‘nurture nature’ basis by a family run winemaker. We have visited Laibach on several occasions and every time we are more than happy that this Bordeaux blend matches our ideal wine criteria.
The wine
Everything is harvested by hand and they get all the grapes into the winery as soon as possible. The assemblage varies by vintage but is approximately 35% Merlot, 30% Cab Sauv, 15% Cab Franc, 15% Petit Verdot, 5% Malbec. Strict sorting by modern equipment after destemming but before crushing is used. This is a very slow process (about 2 tons per hour) but a vital one to get rid of all unwanted green stems that might add some bitterness and to get rid of any over-ripe fruit to ensure clean pure freshness in the wine. The batches are fermented only with wild indigenous yeasts. They don’t use enzymes, tannins, finning agents or any of the 88 products that one is allowed to add to wine these days. The wine spends about a year in small French oak barrels.
The wine estate
Laibach now have around 42 ha of certified organic grapes growing. The Ladybird Organic Red is always 100% grown on the estate to really show a sense of place in the final product. Laibach firmly believe we have some of the best positions to grow red grapes anywhere in the Southern Hemisphere. Not only do they have cool deep clay soils that do not need irrigation, but they also have a perfect slope and sun exposure to get good ripening for their small concentrated berries
