Tasting notes
A pale gold colour with fresh, floral aromas, appley fruit and complex, rich mineral character. Ideal with seafood and soft cheeses.
Why we recommend this wine
We first came across Gautheron in a Michelin star restaurant in the area and went the next day to taste their range. Family owned and sustainable farming and wine making - what more does one need to select their wines?
The wine
Their Chablis vineyards with clay-limestone are located on the right bank of the river Serein, that is, on the same side as the Grand Cru vineyards a bit further downstream. In its Chablis, the Gautheron estate seeks a balance between fruit and minerality. The domaine makes traditional Chablis, with fermentation and maturation in stainless steel tanks avoiding wood to preserve the fresh steely flavours.
The wine estate
Now under the aegis of the sixth generation of a family of wine growers, the Gautheron estate is located in Fleys, a small village of 150 inhabitants, built on the side of a hill. The commune includes approximately 200 hectares of vines, including two premier crus. The estate has over 28 hectares of vines spread over three appellations: Petit Chablis - Chablis - Chablis Premier Cru (Vaucoupin - Mont de Milieu - Fourneaux - Montée de Tonnerre - Homme Mort - Vaillons and Montmains). Since 2020, Domaine Gautheron has been certified HIGH ENVIRONMENTAL VALUE (HVE) Level 3. They produce 220,000 bottles per year.
